Ingredients

1 pre-made pie crust (store-bought or homemade)

6 large eggs

1 cup heavy cream

1 cup milk

1 cup sun-dried tomatoes, chopped (preferably oil-packed, drained)

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

Prepare the Pie Crust: If you’re using a homemade pie crust, roll it out evenly and fit it into a 9-inch pie dish, making sure to tuck the edges neatly. For store-bought crusts, follow the package instructions. Don’t forget to prick the bottom of the crust with a fork to prevent bubbling during baking.

Sauté the Onion and Garlic: Heat a splash of olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until it becomes translucent, taking about 4-5 minutes. Next, stir in the minced garlic and cook for an additional 1-2 minutes until it's aromatic. Once done, remove from heat and let it cool slightly.

Whisk the Egg Mixture: In a spacious mixing bowl, whisk together the eggs, heavy cream, and milk until they are fully incorporated. Season the mixture with salt, pepper, dried oregano, and basil for flavor.

Combine Ingredients: Gently fold the sautéed onion and garlic into the egg mixture. Then, add the chopped sun-dried tomatoes, shredded mozzarella, and crumbled feta cheese. Carefully mix everything to ensure even distribution without overmixing.

Fill the Crust: Pour the rich filling into the prepared pie crust. Spread it out evenly, making sure to distribute the ingredients.

Bake the Quiche: Carefully place the quiche in the preheated oven and bake for 35-40 minutes. It’s ready when the top is golden brown and a knife inserted into the center comes out clean.

Cool and Serve: After baking, allow the quiche to cool for about 10 minutes to set. Once cooled, slice it into wedges. If you like, add a sprinkle of fresh basil leaves on top for a pop of freshness.

Enjoy: This savory quiche can be served warm or at room temperature, making it a perfect choice for brunch or a light dinner!
