Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup kale or spinach, chopped

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

1/2 cup chicken broth (or vegetable broth)

Fresh parsley for garnish (optional)

Instructions

Sauté Onions and Peppers: In a large skillet, heat the olive oil over medium heat. When the oil is shimmering, add the chopped onion and diced red bell pepper. Sauté the vegetables for 3-5 minutes, stirring occasionally, until they soften and release their aroma.

Cook Ground Turkey: Increase the heat to medium-high. Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook for about 5-7 minutes, stirring regularly, until the turkey is browned and cooked through, with no signs of pink remaining.

Add Garlic and Spices: Incorporate the minced garlic, smoked paprika, cumin, oregano, salt, and pepper into the skillet. Stir well and cook for about 1 minute, allowing the garlic to become fragrant and the spices to toast.

Incorporate Sweet Potatoes: Add the diced sweet potatoes to the skillet, mixing them thoroughly with the other ingredients. Pour in the chicken broth and bring the mixture to a gentle simmer. Cover the skillet and let it cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and easily pierced with a fork.

Add Greens: Once the sweet potatoes are cooked through, stir in the chopped kale or spinach. Cook for an additional 3-5 minutes, until the greens are wilted and heated through.

Serve and Garnish: Taste the dish and add additional salt and pepper if needed. Serve the turkey and sweet potato skillet hot, garnished with fresh parsley if desired for a pop of color.
