Ingredients

2 medium zucchinis, spiralized into noodles (often referred to as zoodles)

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil, divided

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Zest of 1 lemon

Juice of 1/2 lemon, or more to taste

Instructions

Prepare the Zoodles: Use a spiralizer to turn the zucchinis into noodle shapes and set them aside. For convenience, you can use store-bought spiralized zucchini noodles if you prefer.

Sauté the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the shrimp, seasoning them with salt, pepper, and red pepper flakes (if desired). Cook for approximately 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the cooked shrimp from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for around 30 seconds, or until it becomes fragrant. Pour in the heavy cream, bringing it to a gentle simmer while stirring consistently.

Incorporate the Cheese: Gradually whisk in the grated Parmesan cheese, stirring until the sauce is rich, smooth, and creamy. If the sauce becomes too thick, feel free to add a splash of reserved pasta water or a bit more cream until you achieve your desired consistency.

Combine Zoodles and Shrimp: Add the spiralized zucchini noodles to the skillet, tossing them gently to coat with the Alfredo sauce. Cook for about 2-3 minutes, just until the zoodles are tender yet still retain a slight crunch. Return the shrimp to the skillet, mixing them through the zoodles.

Finish the Dish: Stir in the lemon zest and lemon juice, adjusting to your taste preferences. Remove from heat and taste for seasoning, adding more salt, pepper, or lemon juice if needed.

Serve: Plate the shrimp Alfredo zucchini noodles, finishing with a sprinkle of freshly chopped parsley for an added touch of color and flavor. Enjoy this delightful and healthy dish!
