Ingredients

2 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (your favorite brand)

1/2 cup chicken broth

1 tablespoon brown sugar

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust based on your spice preference)

Salt and pepper to taste

12 mini slider buns

1 cup coleslaw (store-bought or homemade)

Sliced pickles (for garnish)

Fresh parsley (finely chopped, for garnish)

Instructions

Prepare the Chicken:

    - Start by seasoning the chicken thighs generously with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Make sure the seasoning is evenly distributed over the chicken.

      Slow Cook the Chicken:

        - Place the seasoned chicken thighs in your slow cooker. In a separate mixing bowl, combine the BBQ sauce, chicken broth, brown sugar, and apple cider vinegar. Stir the mixture until well combined, then pour it over the chicken in the slow cooker.

          Set the Cooker:

            - Secure the lid on the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. The goal is to cook until the chicken is tender and can be easily shredded with a fork.

              Shred the Chicken:

                - Once the cooking time is complete, carefully remove the chicken from the slow cooker and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker, stirring it into the sauce. Allow it to simmer for an additional 30 minutes on low to soak up the flavorful sauce.

                  Prepare the Sliders:

                    - While the chicken is simmering, preheat your broiler. Place the mini slider buns on a baking sheet and broil them for about 2 minutes, just until they’re golden brown and lightly toasted.

                      Assemble the Sliders:

                        - To assemble the sliders, take the bottom half of each toasted bun and place a generous serving of the BBQ chicken mixture on top. Add a spoonful of coleslaw and a few slices of pickles to each slider before topping it off with the top half of the bun.

                          Serve:

                            - Arrange the sliders on a serving platter and sprinkle with freshly chopped parsley for a pop of color. Serve warm and enjoy these delicious, smoky, and sweet sliders!
