1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (including juices)

1 can (6 oz) tomato paste

1 cup corn (fresh or frozen)

1 tablespoon chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 cups low-sodium chicken broth

2 tablespoons olive oil

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced onion and bell pepper along with the minced garlic. Sauté the mixture for about 5 minutes, stirring occasionally, until the vegetables are softened and aromatic.

    Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Use a wooden spoon to break the turkey apart as it cooks. Stir frequently, cooking for approximately 6-8 minutes, or until the turkey is fully browned. If there’s excess fat, carefully drain it from the skillet.

      Combine Ingredients in Slow Cooker: Transfer the cooked turkey and vegetable mixture to a slow cooker. To this, add the drained kidney beans, black beans, diced tomatoes (with all juices), tomato paste, corn, and all the spices: chili powder, cumin, smoked paprika, dried oregano, and cayenne pepper. Finally, pour in the chicken broth and season with salt and pepper. Stir thoroughly to ensure all ingredients are well combined.

        Cooking Time: Secure the lid on the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. If possible, stir the chili halfway through the cooking process to promote even cooking and flavor blending.
