Ingredients

8 oz (225g) fettuccine or spaghetti

4 oz (115g) smoked salmon, sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (plus extra for garnish)

Zest and juice of 1 lemon

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot, bring water to a rolling boil and add a generous amount of salt. Introduce the fettuccine or spaghetti and cook according to the package instructions until it reaches an al dente texture. Reserve 1 cup of the pasta cooking water, then drain the pasta in a colander and set it aside to keep warm.

Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, toss in the minced garlic and sauté for approximately 1 minute, stirring frequently, until the garlic is aromatic but not browned.

Make the Cream Sauce: Lower the heat to simmer and pour the heavy cream into the skillet with the garlic. Mix in the Dijon mustard, chopped dill, lemon zest, and the juice of the lemon. Let the sauce simmer gently for about 2-3 minutes, stirring occasionally, to let the flavors combine beautifully.

Combine Pasta and Sauce: Add the drained pasta directly into the skillet with the cream sauce. Gently toss the pasta to ensure every strand is coated in the sauce. Gradually incorporate the reserved pasta water, adding it a little at a time, until the sauce achieves your desired creaminess and consistency.

Add Smoked Salmon: Carefully fold the smoked salmon into the pasta, ensuring it gets warmed through for about 2-3 minutes without cooking it further. Season the dish with salt and freshly ground black pepper to taste, adjusting as necessary.

Serve: Plate the pasta generously among four dishes. Garnish with additional fresh dill and a liberal amount of grated Parmesan cheese for a delightful finish.
