Ingredients

1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, cut into 1-inch cubes

2 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lime juice

1 tablespoon honey

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust according to heat preference)

2 cloves garlic, finely minced

Salt and freshly ground black pepper to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the olive oil, lime juice, honey, chili powder, smoked paprika, cayenne pepper, minced garlic, and a pinch of salt and pepper. Using a whisk, mix the ingredients thoroughly until well blended.

Marinate the Shrimp: Carefully add the peeled and deveined shrimp to the marinade. Gently toss the shrimp in the bowl until they are fully coated with the mixture. Cover the bowl with plastic wrap and let the shrimp marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor absorption.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If you plan to use wooden skewers, soak them in water for 30 minutes prior to grilling to avoid charring.

Assemble the Skewers: Skewer the marinated shrimp and cubed pineapple alternately onto the skewers, ensuring to leave a bit of space between each piece for even cooking and airflow.

Grill the Skewers: Place the assembled skewers on the grill. Grill for about 2-3 minutes on each side, until the shrimp turns a lovely pink color and becomes opaque, while the pineapple caramelizes and develops beautiful grill marks. Be careful not to overcook the shrimp to ensure they remain juicy and tender.

Serve: Once grilled, carefully remove the skewers from the grill and place on a serving platter. Garnish with freshly chopped cilantro and serve with lime wedges on the side for squeezing over the grilled shrimp and pineapple.

Enjoy: Relish your spicy grilled pineapple shrimp as a tantalizing appetizer or pair it over a bed of fluffy rice for a satisfying main course.
