14 oz (400g) firm tofu, drained and pressed

2 tablespoons vegetable oil

1 tablespoon Sichuan peppercorns

4 cloves garlic, minced

1-inch piece of ginger, minced

1 medium red bell pepper, sliced

1 medium green bell pepper, sliced

1 medium onion, sliced

2-3 green onions, chopped (for garnish)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon chili paste (adjust according to your spice preference)

1 tablespoon sesame oil

1 teaspoon sugar

Salt to taste

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. Use a paper towel to pat them dry, ensuring that excess moisture is removed, which helps achieve a crispy texture when cooked.

    Heat the Oil: In a large skillet or wok, add the vegetable oil and heat it over medium-high heat. Once the oil is hot, introduce the Sichuan peppercorns. Stir-fry for about 30 seconds, until you can smell their distinct fragrance. Afterward, remove and discard the peppercorns to infuse the oil with their flavor.

      Stir-Fry the Tofu: Gently add the tofu cubes to the hot oil. Cook for about 5–7 minutes, carefully turning them occasionally so that all sides become beautifully golden brown. Once done, remove the tofu from the pan and set aside on a plate.

        Sauté Aromatics: In the same pan, add a small amount of vegetable oil if needed to ensure the pan remains greased. Add the minced garlic and ginger, sautéing them for about 30 seconds until they’re aromatic and fragrant, being cautious not to burn them.
