1 cup fresh spinach, chopped

1 cup mushrooms, sliced

4 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup diced onions

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

1 package (1 sheet) of pre-made puff pastry

Cooking spray or butter for greasing

Preheat the Oven: Start by preheating your oven to 400°F (200°C). While the oven is warming up, generously grease each well of a muffin tin with cooking spray or butter to prevent sticking.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent. Then, add the sliced mushrooms and continue to cook for an additional 5 minutes until the mushrooms are nicely browned. Finally, stir in the chopped spinach and cook for another 2-3 minutes, or until the spinach is wilted. Once done, remove the skillet from heat and allow the mixture to cool slightly.

      Prepare the Egg Mixture: In a mixing bowl, crack the 4 large eggs and whisk them together with the heavy cream, garlic powder, salt, and black pepper until the mixture is well combined and slightly frothy. Next, gently fold in the sautéed vegetable mixture and half of the shredded cheddar cheese, reserving the other half for topping later.

        Prepare the Puff Pastry: Lightly flour a clean surface and roll out the puff pastry sheet. Using a round cutter or the rim of a glass, cut out circles approximately 4-5 inches in diameter. You will need enough circles to line each muffin tin well, creating small pastry cups.
