Ingredients

4 medium zucchinis

1 lb (450g) cooked chicken, shredded (rotisserie chicken works wonderfully)

1 cup BBQ sauce (use your favorite store-bought brand or homemade)

1 cup shredded cheddar cheese

1/2 cup finely chopped red onion

1/4 cup chopped fresh cilantro, plus extra for garnish

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Optional: sliced jalapeños for an extra kick

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

Prepare the Zucchini: Rinse the zucchinis thoroughly under cold water. Carefully cut each zucchini in half lengthwise to create boats, then scoop out the seeds using a spoon or small melon baller, leaving a sturdy shell. Lightly brush the insides of the zucchini boats with olive oil and season generously with salt and pepper.

Mix the Filling: In a large mixing bowl, combine the shredded chicken with 3/4 cup of BBQ sauce, garlic powder, onion powder, chopped red onion, and half of the chopped cilantro. Mix everything together until the ingredients are evenly combined.

Stuff the Zucchini: Take spoonfuls of the BBQ chicken mixture and fill each zucchini boat evenly, pressing down gently to pack the filling.

Top with Cheese: Drizzle the remaining 1/4 cup of BBQ sauce over the top of the stuffed zucchini boats. Then, sprinkle a generous layer of shredded cheddar cheese on top. For those who enjoy a bit of heat, add sliced jalapeños over the cheese.

Bake: Place the prepared zucchini boats into a baking dish and cover with aluminum foil. Bake in the preheated oven for 25 minutes. After this time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is beautifully bubbly and golden brown.

Garnish and Serve: Once cooked, take the zucchini boats out of the oven and let them cool for a few minutes. Before serving, garnish with the remaining chopped cilantro for a fresh touch. Serve warm and savor each bite!
