2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, diced

2 tablespoons vegetable oil

1 red bell pepper, diced

1 cup frozen peas

3 green onions, chopped (keep whites and greens separated)

4 cloves garlic, minced

2 large eggs, lightly beaten

1/3 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon oyster sauce (optional)

Salt and black pepper to taste

Fresh cilantro leaves, for garnish (optional)

Lime wedges, for serving (optional)

Instructions
 

Prepare the Chicken: In a mixing bowl, season the diced chicken thighs generously with salt and black pepper. Heat 1 tablespoon of vegetable oil in a non-stick skillet or wok over medium-high heat. Add the seasoned chicken to the skillet in a single layer. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Once done, transfer the chicken to a plate and set aside.

    Sauté the Vegetables: Using the same skillet, add the remaining tablespoon of vegetable oil. When the oil is hot, add the minced garlic and the chopped white parts of the green onions. Sauté for approximately 30 seconds, or until fragrant. Next, add the diced red bell pepper and continue cooking for an additional 3-4 minutes, stirring frequently until the bell pepper is slightly softened.

      Incorporate the Rice: Move the sautéed vegetables to one side of the skillet, creating space in the center.           Combine with Chicken and Peas: Reintroduce the cooked chicken and the frozen peas to the skillet.
