Ingredients

1 French baguette, sliced into ½ inch thick pieces

2 cups fresh strawberries, hulled and diced

¼ cup fresh basil leaves, finely chopped

1 tablespoon balsamic vinegar

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper, to taste

1 cup fresh mozzarella, diced or use mozzarella pearls

Optional: Balsamic glaze for drizzling

Instructions

Prepare the Baguette:

    - Preheat your oven to 400°F (200°C).

      - Arrange the baguette slices on a baking sheet in a single layer. Brush the tops lightly with olive oil for a golden finish.

        - Bake in the preheated oven for 5-7 minutes, or until they are golden brown and crispy. Keep an eye on them to prevent burning.

          Prepare the Strawberry Mixture:

            - In a medium-sized bowl, combine the diced strawberries, finely chopped basil, balsamic vinegar, and the remaining olive oil.

              - Gently mix the ingredients to ensure the strawberries are well-coated with the balsamic and oil. Season the mixture with salt and cracked black pepper to taste.

                Assemble the Bruschetta:

                  - Once the baguette slices are toasted, remove them from the oven and allow them to cool slightly for ease of handling.

                    - Generously top each warm slice with the strawberry-basil mixture, ensuring each piece has a nice balance of both.

                      - Finish by adding a few diced mozzarella pieces on top of the strawberry topping for a creamy contrast.

                        Garnish and Serve:

                          - If desired, drizzle balsamic glaze over the assembled bruschetta for added flavor and a stunning visual appeal.

                            - Serve immediately while the baguette is still warm for the most delightful tasting experience.
