2 cups fresh strawberries, hulled and sliced

1 can (13.5 oz) coconut milk (opt for full-fat for extra creaminess)

1/4 cup pure maple syrup or honey (adjust to your sweetness preference)

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of salt

Blend the Strawberries: In a blender, add the hulled and sliced strawberries. Blend until the mixture is completely smooth. For added texture, you can set aside a few chunks of strawberries to mix in later.

    Prepare the Coconut Base: In a medium mixing bowl, whisk together the coconut milk, pure maple syrup (or honey), vanilla extract, and a pinch of salt. Mix until all ingredients are well incorporated and smooth.

      Combine Mixtures: Pour the blended strawberry puree into the coconut milk mixture. Stir thoroughly to ensure they are well combined. Then, add the chia seeds to the mixture, stirring well to distribute them evenly.

        Let it Rest: Allow the combined mixture to sit for 10-15 minutes at room temperature. Stir occasionally to prevent clumping and let the chia seeds swell, thickening the mixture into a pudding-like consistency.
