Ingredients
  

1 1/4 cups all-purpose flour, plus extra for dusting

1/4 cup granulated sugar, divided

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3 to 4 tablespoons ice water

2 cups fresh strawberries, hulled and quartered

2 cups fresh peaches, pitted and thinly sliced

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 egg, beaten (for egg wash)

Coarse sugar, for sprinkling (optional)

Instructions
 

Make the Dough:

    - In a large mixing bowl, whisk together the flour, 2 tablespoons of sugar, and salt until evenly combined.

      - Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse breadcrumbs with some pea-sized butter pieces remaining.

        - Gradually drizzle in the ice water, one tablespoon at a time, mixing gently until the dough just starts to come together. You may not need all of the water; handle the dough as little as possible to maintain its flakiness.

          - Shape the dough into a disk, wrap it in plastic wrap, and refrigerate it for at least 30 minutes to chill.

            Prepare the Filling:

              - In a large bowl, combine the hulled and quartered strawberries, thinly sliced peaches, cornstarch, the remaining 2 tablespoons of sugar, vanilla extract, and lemon juice. Toss the mixture gently to coat the fruit without mashing it. Let the filling sit for 10-15 minutes to allow the flavors to meld and the juices to accumulate.

                Preheat the Oven:

                  - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

                                    Bake:
