½ cup almond flour

¾ cup granulated sugar

2 teaspoons baking powder

Zest of 1 lemon

Zest of 1 orange

1 cup mixed berries (fresh or frozen: blueberries, raspberries, and diced strawberries)

½ cup plain Greek yogurt

½ cup buttermilk

⅓ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

2 tablespoons honey (optional, for extra sweetness)

Begin by preheating your oven to 375°F (190°C). Prepare a standard muffin tin by either lining it with paper liners or giving it a light coat of cooking spray to prevent sticking.

    In a large mixing bowl, thoroughly whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, baking soda, and salt until all ingredients are evenly distributed. Add the zest of the lemon and orange to the dry ingredients, stirring until the mixture is fragrant.

      In a separate bowl, combine the Greek yogurt, buttermilk, vegetable oil (or melted coconut oil), eggs, vanilla extract, and honey (if using). Whisk until all ingredients are smooth and well blended.

        Gradually fold the wet ingredients into the dry mixture using a spatula. Mix gently until just combined; be careful not to overmix. The batter should remain slightly lumpy for a light texture.
