1 package of pizza dough (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small zucchini, thinly sliced

1 small bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 cup baby spinach

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

Marinara sauce (for dipping)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Filling: In a large mixing bowl, mix together the ricotta, mozzarella, and Parmesan cheeses until smooth. Add the sliced zucchini, diced bell pepper, halved cherry tomatoes, thinly sliced red onion, and baby spinach. Drizzle the olive oil over the mixture, then add the dried oregano, garlic powder, and a pinch of salt and pepper. Stir well until all ingredients are evenly combined.

      Roll Out the Dough: On a lightly floured surface, roll the pizza dough into a rectangle measuring approximately 10x14 inches. Aim for a uniform thickness for even baking.

        Spread the Filling: Take the veggie and cheese mixture and spread it evenly over the dough, ensuring to leave about a 1-inch border around the edges, which will help seal the roll later.
