1 medium zucchini, sliced into rounds

1 bell pepper (choose from red, yellow, or orange), cut into 1-inch pieces

1 red onion, cut into wedges

1 cup cherry tomatoes, whole

1 cup button mushrooms, halved

1 cup corn kernels (fresh or frozen, thawed)

2 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

Fresh basil leaves, for a fragrant garnish (optional)

Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes prior to grilling. This step helps prevent them from burning on the grill.

    Vegetable Preparation: In a large mixing bowl, combine the sliced zucchini, bell pepper chunks, red onion wedges, whole cherry tomatoes, halved mushrooms, and corn kernels. Toss gently to mix.

      Marinating the Vegetables: In a separate small bowl, mix together the olive oil, balsamic vinegar, garlic powder, dried oregano, and a pinch of salt and pepper. Whisk until well combined.
