Ingredients

1 cup rolled oats

1 cup vanilla protein powder

1 cup unsweetened applesauce

1/2 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped dried apples

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, vanilla protein powder, ground cinnamon, nutmeg, and salt. Use a whisk or fork to stir the mixture thoroughly until all the dry ingredients are evenly distributed.

Combine Wet Ingredients: In a separate bowl, blend the unsweetened applesauce, almond butter, and honey (or maple syrup). Mix together until the combination is smooth, creamy, and well incorporated.

Combine All Ingredients: Pour the wet mixture into your bowl of dry ingredients. Stir with a spatula or wooden spoon until everything is fully combined. The texture should be thick yet moldable. If you find the mixture is too dry, add a splash of almond milk; if too wet, incorporate a little more rolled oats until the consistency feels just right.

Add Dried Apples: Carefully fold in the chopped dried apples and nuts (if using) into the mixture, ensuring they are evenly distributed without breaking them apart too much.

Chill the Mixture: Cover the bowl with plastic wrap or a tight-fitting lid and refrigerate for about 30 minutes. This will help the mixture firm up, making it easier to shape.

Form the Bites: After chilling, take the mixture out of the refrigerator. Using your hands, scoop out small portions of the mixture (aim for about 1 inch in diameter), and roll them into balls. Arrange the formed bites on a parchment-lined baking sheet.

Refrigerate Again: Once all the bites are shaped, return them to the refrigerator and chill for an additional 30 minutes to allow them to set firmly.

Enjoy!: Serve these delightful protein bites as a quick and nutritious snack or satisfying breakfast. Store any leftovers in an airtight container inside the refrigerator for up to a week for maximum freshness.

Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: About 15 bites

Presentation Tips: For an appealing display, arrange the protein bites on a snack platter and garnish with fresh apple slices and a sprinkle of cinnamon for a pop of color and added flavor.
