1 lb boneless, skinless chicken thighs

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon fresh lime juice

1 teaspoon minced garlic

1 teaspoon freshly grated ginger

Salt and pepper to taste

4 whole wheat pita pockets

1 cup shredded lettuce

1 cup shredded carrots

1/2 cup cucumber, thinly sliced

1/4 cup fresh cilantro, finely chopped

Optional: sliced jalapeño for an extra kick

Instructions
 

Marinate the Chicken:

    - In a medium mixing bowl, combine the sweet chili sauce, soy sauce, sesame oil, lime juice, minced garlic, grated ginger, and a pinch of salt and pepper.

      - Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated with the marinade.

        - Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

          Cook the Chicken:

            - Preheat a grill pan or an outdoor grill over medium-high heat.

              - Once hot, remove the chicken thighs from the marinade (discarding the leftover marinade) and place them on the grill.

                - Grill for approximately 6-7 minutes on each side, or until the chicken is fully cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                  - After grilling, remove the chicken from the heat and let it rest for 5 minutes before slicing it into strips.

                    Prepare the Pita:

                      - While the chicken is resting, warm the pita pockets. Place them on the grill for about 1 minute on each side until they are soft and pliable.

                        - Alternatively, you can preheat your conventional oven to 350°F (175°C) and warm the pita pockets for about 5 minutes.

                          Assemble the Wraps:

                            - Take each warm pita pocket and fill it with a generous handful of shredded lettuce and shredded carrots.

                              - Layer the sliced grilled chicken on top.

                                - Add the sliced cucumber, a sprinkle of freshly chopped cilantro, and if you like some heat, include a few slices of jalapeño.

                                  Serve:

                                    - Drizzle any remaining sweet chili sauce over the filled pita pockets for added flavor.

                                      - Fold the pita wraps snugly to enclose the fillings, and serve immediately. If desired, offer extra sweet chili sauce on the side for dipping.
