Ingredients

1 cup whole almonds (choose between raw or roasted based on your preference)

1 cup dark chocolate chips (or chopped dark chocolate)

2 tablespoons coconut oil (optional; use to add shine and smoothness)

1 teaspoon vanilla extract

1 tablespoon sea salt (adjust according to taste)

1/4 cup dried cranberries or raisins (optional; adds a delightful fruity element)

Parchment paper (for lining the baking sheet)

Instructions

Prep the Baking Sheet: Start by lining a baking sheet with parchment paper. This will help prevent the clusters from sticking and make for easy cleanup. Set the lined sheet aside for later use.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if you’re using it). Heat the mixture in the microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat. Alternatively, you can melt the chocolate using a double boiler for controlled heat.

Add Flavoring: Once the chocolate is melted, remove it from the microwave or heat source. Stir in the vanilla extract and half of the sea salt, adjusting the salt to your taste preference. If you choose to include dried cranberries or raisins for a fruity touch, carefully fold them into the melted chocolate mixture at this point.

Combine Almonds: Add the whole almonds to the bowl of chocolate. Use a spatula or spoon to gently stir until all the almonds are evenly coated in the chocolate mixture.

Form Clusters: With a spoon, scoop out portions of the chocolate-coated almond mixture and drop them onto the prepared baking sheet. You can shape them into mounds of any size, although keeping them uniform will help ensure they set evenly.

Sprinkle with Salt: Before the chocolate begins to set, sprinkle the remaining sea salt generously on top of the clusters. This touch adds a wonderful contrast of sweet and salty flavors.

Chill to Set: Place the baking sheet into the refrigerator and allow the clusters to chill for about 30-45 minutes, or until the chocolate has fully hardened and the clusters are firm.

Serve and Enjoy: Once the chocolate has set, gently remove the clusters from the parchment paper. Indulge in your Sweet Chocolate Almond Clusters! For storage, keep any leftovers in an airtight container in the fridge, where they will stay fresh for up to two weeks.
