Ingredients

2 cups fresh or frozen sweet corn, thawed if using frozen

1 cup diced green chiles (canned or freshly roasted)

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon garlic powder

½ cup cold unsalted butter, cut into small cubes

1 cup buttermilk, at room temperature

1 large egg, lightly beaten

1 cup shredded cheddar cheese (optional, for added richness)

Fresh cilantro or sliced green onions for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare a 9x13-inch baking dish by greasing it lightly or lining it with parchment paper for easy removal.

Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, black pepper, and garlic powder. Whisk these ingredients together until they are evenly blended for uniform flavor.

Incorporate the Butter: Using a pastry cutter or your fingertips, cut the cold butter cubes into the dry ingredients. Work the mixture until it resembles coarse crumbs, ensuring there are no large lumps of butter remaining.

Combine the Wet Ingredients: In a separate bowl, whisk together the buttermilk and the lightly beaten egg until completely combined. Slowly pour this mixture into the bowl with the dry ingredients, stirring gently until the dough just comes together—do not overmix to retain a tender biscuit texture.

Fold in Corn and Chiles: Carefully fold the sweet corn and diced green chiles into the biscuit dough using a spatula or wooden spoon. Ensure they are evenly distributed throughout the mixture without overworking the dough.

Add Cheese (Optional): If you choose to add some cheesiness to the bake, gently fold in the shredded cheddar cheese until evenly incorporated.

Transfer to Baking Dish: Spoon the prepared biscuit dough into your greased baking dish, spreading it evenly across the bottom.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes. The top should turn a lovely golden brown, and a toothpick inserted into the center should come out clean, indicating it’s ready.

Cool and Garnish: Once baked, remove the casserole from the oven and allow it to cool for about 10 minutes. Just before serving, garnish with freshly chopped cilantro or sliced green onions for a burst of color and flavor.

Serve and Delight: Cut into squares and dish out warm, making it an excellent side for dinner or a hearty addition to your breakfast table!
