1 cup almond milk (or any milk of your choice)

1/2 cup chia seeds

1 ripe mango, diced into small cubes

2 tablespoons maple syrup (or honey if preferred)

1 teaspoon pure vanilla extract

A pinch of sea salt

Toasted coconut flakes (for topping)

Fresh mint leaves (for garnish)

Instructions
 

In a medium mixing bowl, pour in the almond milk. Add the chia seeds, maple syrup, vanilla extract, and a pinch of salt. Use a whisk to thoroughly mix the ingredients together, ensuring there are no clumps of chia seeds left.

    Allow the mixture to sit for about 10 minutes. After this time, whisk it again to break up any clumps that may have formed as the chia seeds begin to absorb moisture.

      Cover the bowl tightly with plastic wrap or divide the mixture into individual serving jars. Place in the refrigerator for a minimum of 3 hours, or preferably overnight. This allows the chia seeds to swell and develop a creamy, pudding-like texture.

        When you’re ready to serve, give the pudding a good stir to ensure it’s smooth and well combined. Begin layering half of the chia pudding into serving glasses.

          Place half of the diced mango on top of the first layer of pudding.

            Add the remaining chia pudding on top of the mango layer, then finish with the rest of the diced mango.

              To add a delightful crunch and flavor, generously sprinkle toasted coconut flakes over the final layer of mango. Garnish with fresh mint leaves for a burst of color and freshness.
