2 large sweet potatoes, peeled and cut into 1-inch cubes

1 tablespoon extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cinnamon

Salt and freshly ground black pepper, to taste

½ cup feta cheese, crumbled

¼ cup pure honey

2 tablespoons fresh parsley, finely chopped (for garnish)

Optional: ¼ cup chopped walnuts or pecans for added crunch

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To prevent sticking, line a large baking sheet with parchment paper.

    Prepare Sweet Potatoes: In a spacious mixing bowl, add the cubed sweet potatoes. Drizzle the olive oil over them, then sprinkle with smoked paprika, garlic powder, ground cinnamon, and season with salt and pepper. Toss well until all the sweet potato cubes are thoroughly coated and evenly seasoned.

      Bake: Transfer the seasoned sweet potato cubes to the prepared baking sheet, spreading them out in a single layer to ensure even cooking. Bake in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and have developed a golden-brown caramelization, flipping them halfway through baking for uniform results.

        Add Feta: Carefully remove the sweet potatoes from the oven. Evenly sprinkle the crumbled feta cheese over the top, then return them to the oven for an additional 5 minutes, allowing the feta to soften and melt slightly.
