1 banana, sliced into rounds

½ cup pineapple chunks (can be fresh or canned)

½ cup granola (coconut or vanilla-flavored for the best results)

¼ cup shredded coconut, toasted (for garnish)

Fresh mint leaves (for garnish and added freshness)

Prepare the Chia Pudding: In a medium-sized mixing bowl, combine the chia seeds, coconut milk, maple syrup, and vanilla extract. Use a whisk or a fork to blend the ingredients thoroughly, ensuring the chia seeds are evenly distributed throughout the liquid.
