Avocados are often hailed as a superfood, and for good reason. They are rich in heart-healthy monounsaturated fats, which can help lower bad cholesterol levels while raising good cholesterol. Additionally, avocados are an excellent source of dietary fiber, potassium, and vitamins C, E, K, and B6. This combination of nutrients not only supports overall heart health but also aids in digestion and promotes healthy skin. When preparing Tuna Avocado Salad Boats, selecting ripe, fresh avocados is crucial, as they lend a creamy texture and buttery flavor to the dish.

Ingredients

2 ripe avocados

1 can (5 oz) of tuna, drained (preferably packed in water)

1/4 cup Greek yogurt (may substitute with mayonnaise if preferred)

1 tablespoon Dijon mustard

1 tablespoon freshly squeezed lemon juice

1/4 cup red onion, finely chopped

1/4 cup celery, finely diced

1-2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)

Salt and black pepper to taste

Cherry tomatoes, halved (for garnish)

Optional: lettuce leaves for serving

Instructions

Prepare the Avocados: Carefully cut the avocados in half lengthwise and remove the pit. Using a spoon, scoop out a small portion of the flesh from the center to create a larger cavity for the filling. Set the removed avocado flesh aside for later use.

Make the Tuna Salad: In a medium mixing bowl, add the drained tuna. Mix in the Greek yogurt, Dijon mustard, freshly squeezed lemon juice, chopped red onion, diced celery, and fresh dill. Season the mixture with a pinch of salt and black pepper. For a creamier texture, mash the reserved avocado flesh and fold it into the salad until well combined.

Taste and Adjust: After mixing all the ingredients, take a moment to taste the tuna salad. Adjust the seasoning if necessary by adding more lemon juice or dill to suit your personal preference.

Fill the Avocado Boats: Generously spoon the tuna salad mixture into each avocado half, packing it in lightly, ensuring that it is nicely mounded on top.

Garnish: Add a colorful touch by placing halved cherry tomatoes on top of each filled avocado. For added crunch and visual appeal, consider serving the avocado boats on a bed of fresh lettuce leaves.

Serve: Either enjoy the Tuna Avocado Salad Boats immediately or chill them briefly in the refrigerator to allow the flavors to meld. These tasty boats are perfect for a light lunch, a healthy snack, or as an elegant appetizer!
