Tuna Stuffed Tomatoes

Ingredients
  

4 large, ripe tomatoes

1 can (5 oz) tuna packed in olive oil, thoroughly drained

1/4 cup creamy mayonnaise

1 tablespoon Dijon mustard

1 tablespoon freshly squeezed lemon juice

1/4 cup red onion, finely diced

1/4 cup celery, finely chopped

1/4 cup sweet pickle relish

2 tablespoons fresh parsley, finely chopped

Salt and freshly ground black pepper, to taste

Optional: Lettuce leaves for a fresh base

Instructions
 

Prepare the Tomatoes:

    - Begin by washing the tomatoes thoroughly. Cut the tops off each tomato carefully, creating a small cap. Using a spoon, gently scoop out the seeds and pulp, taking care not to pierce the skin of the tomatoes. Set the emptied tomatoes aside on a plate.

      Make the Tuna Filling:

        - In a medium mixing bowl, combine the drained tuna with the mayonnaise, Dijon mustard, and freshly squeezed lemon juice. Stir well with a fork to ensure that all ingredients are blended smoothly.

          - Next, fold in the finely diced red onion, chopped celery, sweet pickle relish, and fresh parsley. Mix until the ingredients are uniformly incorporated.

            - Season the mixture with salt and freshly ground black pepper to taste. Feel free to adjust the seasoning by adding more lemon juice if you prefer a tangier flavor.

              Stuff the Tomatoes:
