Turkey Bacon Breakfast Quesadillas

8 slices of turkey bacon

1 cup shredded cheddar cheese

1 cup scrambled eggs (about 4 large eggs, beaten)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped green onions

2 tablespoons olive oil (plus more if needed)

1 teaspoon ground black pepper

1 teaspoon garlic powder

Salt, to taste

Cook the Turkey Bacon:

    In a large skillet over medium heat, add the turkey bacon slices in a single layer. Cook for approximately 6-8 minutes, turning occasionally, until the bacon is crispy and browned. Once cooked, remove from the skillet and place on a paper towel-lined plate to drain excess fat. As it cools, chop the bacon into bite-sized pieces.

      Scramble the Eggs:

        Using the same skillet, add a little olive oil if there's not enough bacon grease left. Pour in the beaten eggs, stirring gently with a spatula. Cook the eggs over medium heat, stirring occasionally, until fully cooked but still soft and fluffy. Season with salt, ground black pepper, and garlic powder, and remove from the heat when done.

          Combine the Filling:

            In a large mixing bowl, combine the chopped turkey bacon, scrambled eggs, diced bell peppers, and green onions. Stir everything together until well mixed, ensuring an even distribution of ingredients.

              Assemble the Quesadillas:

                Heat a clean skillet over medium-low heat and lightly brush it with olive oil.
