Ingredients

For the Turkey Tacos:

1 lb ground turkey

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

For the Watermelon Slaw:

2 cups fresh watermelon, diced (seeds removed)

1 cup red cabbage, finely shredded

1/2 cup carrots, grated

1/4 cup red onion, thinly sliced

1 jalapeño, seeded and finely chopped (optional for heat)

1/4 cup fresh mint leaves, chopped

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tbsp honey or maple syrup

Salt and pepper, to taste

Instructions

Prepare the Watermelon Slaw:

    - In a large mixing bowl, combine the diced watermelon, shredded cabbage, grated carrots, sliced red onion, jalapeño (if using), and chopped mint leaves.

      - In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until you achieve a smooth dressing.

        - Drizzle the dressing over the watermelon mixture and gently toss everything together to ensure an even coating. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to develop.

          Cook the Turkey:

            - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, roughly 3-4 minutes.

              - Stir in the minced garlic and cook for an additional minute, until the garlic becomes fragrant.

                - Add the ground turkey to the skillet along with the chili powder, cumin, smoked paprika, salt, and pepper. Cook while stirring occasionally until the turkey is browned and fully cooked, about 8-10 minutes. Taste and adjust the seasoning as needed.

                  Warm the Tortillas:

                    - While the turkey is cooking, warm the tortillas on a separate skillet over medium heat for about 30 seconds on each side until soft. Alternatively, you can wrap the tortillas in aluminum foil and warm them in the oven at 350°F (175°C) for about 5 minutes.

                      Assemble the Tacos:

                        - On a serving platter, lay out the warmed tortillas. Spoon a generous amount of the seasoned turkey mixture onto each tortilla.

                          - Top each taco with a hearty portion of the watermelon slaw and garnish generously with fresh cilantro.

                            Serve:

                              - Serve the tacos immediately, accompanied by lime wedges for an extra burst of flavor. Enjoy your vibrant and refreshing Turkey Tacos with Watermelon Slaw!
