Prep the Vegetables: Begin by rinsing and thoroughly drying all fresh vegetables. Next, thinly slice your chosen bell pepper and peel and julienne the cucumber. Grate the carrots. To prevent browning, slice the avocado just before you're ready to assemble the wraps.
