4 cups of seedless watermelon, cubed

1 cup of freshly squeezed lemon juice (approximately 4-6 lemons, depending on size)

1/2 cup of honey or maple syrup (adjust to your desired sweetness)

1 cup of cold water

Zest from 2 lemons

Optional: fresh mint leaves for garnish

Prepare the Watermelon: Begin by cutting the seedless watermelon into small, manageable cubes. Transfer the cubed watermelon to a blender and blend until you achieve a smooth consistency. For an ultra-smooth experience, you may strain the puree through a fine mesh sieve to eliminate any pulp; however, this step is optional depending on your texture preference.

    Combine Ingredients: In a large mixing bowl, pour in the fresh watermelon juice you just prepared. Add in the freshly squeezed lemon juice, honey or maple syrup, cold water, and the zest of 2 lemons. Use a whisk or a spoon to stir the mixture thoroughly until the sweetener is fully dissolved and the ingredients are well mixed.

      Taste Test: Before filling your molds, take a moment to taste the mixture. If you desire a sweeter or more tangy flavor, feel free to adjust the sweetness by adding extra honey or maple syrup, or a splash more lemon juice until it meets your taste preference.

        Pour into Molds: Carefully pour the finished watermelon lemonade mixture into your popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion as they freeze.

          Insert Sticks: If your popsicle molds come without lids, place popsicle sticks in the center of each mold. If necessary, cover the molds with aluminum foil to help keep the sticks upright during the freezing process.

            Freeze: Transfer the molds to the freezer and allow them to freeze for a minimum of 4-6 hours, or until the pops are completely solid.

              Unmold the Pops: To safely release the pops from their molds, run warm water over the outer surface for a few seconds to loosen them. Gently pull each popsicle out, taking care to maintain their shape.
