Ingredients

1 small seedless watermelon

200g feta cheese, cubed

1 cup fresh mint leaves

1 tablespoon balsamic glaze (optional)

Freshly cracked black pepper (to taste)

Skewers (8-10 inches long, wooden or metal)

Instructions

Prepare the Watermelon:

Begin by cutting the watermelon into 1-inch cubes. If you happen to use a watermelon with seeds, be sure to remove them. After cutting, gently pat the cubes dry with a paper towel to eliminate excess moisture, which will help keep the skewers from becoming soggy.

      Cube the Feta:

Slice the feta cheese into similarly-sized 1-inch cubes to ensure they pair nicely with the watermelon cubes. This uniformity will help them stack better when assembling the skewers.

          Assemble the Skewers:

Take a skewer and carefully thread one watermelon cube onto it. Next, place a fresh mint leaf onto the skewer; if the leaf is large, feel free to fold it for easier threading. Follow this with a feta cube. Continue this pattern—watermelon, mint, feta—until the skewer is filled. You can usually fit 3-5 sets per skewer, depending on their length and your preference, leaving a little space at the end for easy handling.

              Drizzle with Balsamic Glaze:

Once all your skewers are assembled, drizzle a small amount of balsamic glaze over them if you wish. This addition will give an extra layer of flavor and provide a lovely finishing touch to the presentation.

                  Season:

Finally, sprinkle freshly cracked black pepper over the skewers to add a delightful zing and enhance their flavor profile.

                      Chill and Serve:

For the best taste experience, allow your skewers to chill in the refrigerator for at least 15-30 minutes before serving. This step not only enhances the freshness of the ingredients but also melds the flavors together beautifully. Arrange the skewers on a platter and serve them cold as a refreshing appetizer or a light snack!
