4 cups of seedless watermelon, cubed

2 tablespoons of freshly squeezed lime juice

1 teaspoon of Tajín seasoning (plus extra for serving)

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Watermelon: Begin by cutting the seedless watermelon into small, bite-sized cubes. Take your time to ensure that all seeds are removed, resulting in a smooth and enjoyable texture.

    Blend the Mixture: In a blender, add the cubed watermelon along with the freshly squeezed lime juice and 1 teaspoon of Tajín seasoning. Blend on high until the mixture is completely smooth and well combined, creating a refreshing watermelon puree.

      Strain (Optional): For a silkier Popsicle texture, you can strain the watermelon mixture through a fine mesh sieve to capture any pulp. This step is optional, depending on your texture preference.

        Pour into Molds: Carefully pour the blended watermelon mixture into your popsicle molds, filling each mold approximately three-quarters full. This allows enough space for the pops to expand as they freeze.

          Insert Sticks: Take a wooden popsicle stick and gently insert it into the center of each mold, ensuring that it stands upright and is properly centered to create evenly shaped pops.

            Freeze: Place the filled molds in the freezer and allow them to freeze for a minimum of 4-6 hours, or until they are completely solid.

              Serve: Once frozen, to remove the pops from their molds, run warm water over the outside of the molds for a few seconds to loosen them.
