1 ripe avocado, sliced

1/2 cup corn (fresh, frozen, or canned)

Instructions
 

Cook the Rice: Begin by rinsing the long-grain white rice under cold water until the water runs clear to remove excess starch. In a medium-sized saucepan, combine the rinsed rice and vegetable broth.
