Ingredients

2 cups fresh corn kernels (from about 3-4 ears of corn, or you can use 1 can of corn, drained)

1 ripe avocado, diced into bite-sized pieces

1 medium red onion, finely chopped

1 small jalapeño, finely diced (de-seed for milder flavor)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped (stems removed)

Juice of 2 limes (about 1/4 cup)

1/2 teaspoon ground cumin

Salt and freshly cracked black pepper, to taste

Instructions

Prepare the Corn: If you’re using fresh corn, secure an ear of corn vertically on a cutting board and use a sharp knife to slice downwards to remove the kernels. Alternatively, if using canned corn, open the can and drain before rinsing under cold water to remove excess sodium.

Combine Ingredients: In a large mixing bowl, combine the fresh corn kernels (or drained canned corn), diced avocado, chopped red onion, finely diced jalapeño, and halved cherry tomatoes.

Add Flavor: Sprinkle in the chopped cilantro, pour in the fresh lime juice, and add the ground cumin. Using a spatula or spoon, gently mix all the ingredients together. Take care not to mash the avocado too much; you want it to maintain its shape.

Season to Taste: Add salt and freshly cracked black pepper according to your preferences. Feel free to adjust the lime juice for extra zest or add more jalapeño if you’re aiming for a bit more heat!

Let it Marinate: Allow the salsa to rest at room temperature for about 10-15 minutes. This step is crucial, as it lets the flavors meld together beautifully.

Serve with Style: Present the salsa in a colorful bowl, and serve it with crispy tortilla chips for dipping. It also makes a delightful topping for tacos, grilled chicken, or fish.

              Prep Time: 15 minutes | Total Time: 15 minutes | Servings: 4-6

Presentation Tips: For an extra pop of color, you can garnish the salsa with additional cilantro leaves or lime wedges. Consider serving it in a rustic wooden bowl for a charming touch!
