Ingredients

8 ounces cream cheese, softened to room temperature

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 cup canned jalapeños, drained and diced

3 green onions, finely chopped (white and green parts)

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup Panko breadcrumbs

2 tablespoons olive oil

Fresh cilantro, chopped for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking.

Mix the Base: In a large mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer or a sturdy spatula to blend these ingredients together until the mixture is smooth and creamy, ensuring there are no lumps.

Add Cheeses: Gently fold in the shredded sharp cheddar and pepper jack cheeses, mixing thoroughly until everything is evenly incorporated into the creamy base.

Incorporate Jalapeños and Onions: Add the diced jalapeños, finely chopped green onions, minced garlic, smoked paprika, onion powder, salt, and black pepper. Carefully mix until all ingredients are well combined, ensuring a uniform distribution of flavors.

Prepare the Topping: In a separate bowl, combine the Panko breadcrumbs with olive oil and a pinch of salt. Stir until the breadcrumbs are fully coated with oil, creating a crispy topping.

Assemble the Dip: Transfer the creamy jalapeño mixture into a greased baking dish (approximately 8x8 inches). Spread it out evenly to create a smooth layer. Then, sprinkle the prepared Panko breadcrumb mixture generously on top for added crunch.

Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes. The dip is ready when it is bubbly and the topping has turned a delicious golden brown.

Garnish and Serve: Remove the dip from the oven and let it cool slightly for a few minutes. If desired, garnish with chopped fresh cilantro for a pop of color and freshness before serving. Enjoy the dip warm, paired with tortilla chips, crunchy crackers, or crisp sliced veggies for a delightful snack!
