Ingredients

4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1/2 cup green onions, thinly sliced (both white and green parts)

1/4 cup fresh dill, finely chopped

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

2 tablespoons fresh lemon juice

1 teaspoon lemon zest (from about half a lemon)

1 teaspoon Dijon mustard

1 tablespoon honey

Salt and freshly ground pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine 4 cups of finely shredded green cabbage, 1 cup of finely shredded red cabbage, 1 cup of grated carrots, and 1/2 cup of thinly sliced green onions. Toss the ingredients gently using your hands or a large spoon until they are well mixed.

Make the Dressing: In a small mixing bowl, whisk together 1/2 cup of mayonnaise, 1/4 cup of plain Greek yogurt, 2 tablespoons of fresh lemon juice, 1 teaspoon of lemon zest, 1 teaspoon of Dijon mustard, and 1 tablespoon of honey. Mix until the dressing is smooth and creamy.

Combine Coleslaw and Dressing: Drizzle the prepared dressing over the mixed vegetables. Add 1/4 cup of finely chopped fresh dill on top and season with salt and freshly ground pepper to taste. Carefully toss the slaw using a large spoon until all the vegetables are well coated with the dressing.

Chill: Cover the coleslaw with plastic wrap or a lid and refrigerate for at least 30 minutes. This resting period will allow the flavors to meld beautifully and the vegetables to soften slightly.

Serve: Before serving, give the coleslaw another gentle stir to refresh it. Taste and adjust the seasoning with additional salt, pepper, or a touch more lemon juice if desired. Garnish with extra dill sprigs or lemon wedges on the side for an appealing presentation.

            Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 6-8

              - Presentation Tips: For an elevated presentation, serve the coleslaw in a large, decorative bowl and sprinkle additional dill over the top. Consider adding a few lemon slices or wedges around the bowl for a pop of color.
