2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cup cucumber, diced into small cubes

1 cup canned chickpeas, drained and rinsed

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional for added flavor)

Juice of 1 large lemon

Zest of 1 lemon

3 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: fresh arugula or spinach for serving

Prepare the Quinoa: In a medium-sized saucepan, bring 2 cups of vegetable broth (or water) to a rolling boil.
