1 French baguette, cut into 1/2-inch thick slices

2 cups cherry tomatoes, finely diced

1 medium cucumber, peeled and diced into small pieces

3 cloves garlic, minced

1/4 cup fresh basil, finely chopped (chiffonade)

1/4 cup fresh parsley, chopped

2 tablespoons balsamic vinegar

2 tablespoons extra virgin olive oil

1 teaspoon fresh lemon juice

Salt and freshly ground black pepper, to taste

Optional: 1/2 cup crumbled feta cheese for topping

Preheat the Oven: Set your oven to 400°F (200°C) to ensure it's adequately heated for toasting the bread.

    Prepare the Baguette: Arrange the baguette slices in a single layer on a baking sheet. Drizzle a small amount of extra virgin olive oil over each piece, then sprinkle lightly with salt. Place the baking sheet in the preheated oven and toast for approximately 5-7 minutes, or until the bread is golden brown and crispy.

      Make the Topping: In a large mixing bowl, combine the diced cherry tomatoes and cucumber. Add the minced garlic, fresh basil, and parsley, mixing well to incorporate all the herbs.
