Prepare the Zucchini: Start by grating the zucchinis using either a box grater or a food processor for efficiency. Once grated, transfer the zucchini to a clean kitchen towel. Gather the edges of the towel and twist it to squeeze out as much moisture as possible. This step is crucial for achieving crispy fritters, so ensure you get rid of excess liquid.

    Mix the Ingredients: In a large mixing bowl, combine the drained zucchini with the salt, flour, grated Parmesan cheese, egg, chopped green onions, minced garlic, black pepper, and paprika if using. Stir the mixture thoroughly until it forms a cohesive and thick batter, ensuring all ingredients are evenly incorporated.

      Heat the Oil: In a large skillet, pour in about 1/4 inch of olive oil and heat it over medium heat. To test if the oil has reached the right temperature, drop in a small spoonful of the batter—if it sizzles, the oil is ready for frying.
