2 large zucchinis

1 cup shredded sharp cheddar cheese

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, halved

1/2 cup sliced jalapeños (fresh or pickled)

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

Cooking spray or olive oil for greasing

Preheat the Oven: Set your oven temperature to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper to prevent sticking.

    Prepare the Zucchini: Take the zucchinis and slice them lengthwise into planks about 1/4 inch thick. Use a spoon to scoop out a bit of the inner flesh from each plank, creating a shallow well that will hold the toppings.

      Season the Zucchini: In a small mixing bowl, combine olive oil, chili powder, garlic powder, cumin, salt, and black pepper. Use a brush or spray to evenly coat both sides of the zucchini planks with this flavorful mixture.

        Bake the Zucchini: Arrange the seasoned zucchini planks in a single layer on your prepared baking sheet. Place them in the preheated oven and bake for 15-20 minutes, until they are tender and begin to char slightly.
